RICE PUDDING 
2 eggs
1/2 c. sugar
1/2 tsp. salt
2 1/4 c. milk
1 tsp. vanilla
2 c. steamed rice

Separate eggs and beat yolks. Add remaining ingredients. Beat egg whites until stiff; fold into mixture. Turn into baking dish. Sprinkle with nutmeg. Bake 45 minutes at 350 degrees. Serves 6.
