SPANAKOPETA 
(Spinach pie)

4 boxes frozen leaf spinach
1 onion, chopped finely
Seasoned bread crumbs
1/2 lb. Feta cheese
1/2 lb. Mozzarella cheese
Pinch of salt, pepper, dill
5 to 6 eggs
3/4 lb. butter
Filo dough

Saute' onion in 1/4 pound butter. Add frozen spinach. Mix in pot and let it cool. Crumble Feta cheese, chop Mozzarella, mix together. Add eggs, salt, pepper, dill, mix well.

Butter roasting pan; place 1 sheet filo and brush a few strokes of melted butter. Repeat for about 7 to 8 sheets filo. Spread drained spinach mixture covering the entire filo. Pour egg mixture on top of spinach and spread it evenly. Sprinkle seasoned bread crumbs on top. Repeat the buttered filo for about 7 or 8 sheets again. Cut the top into the desired pieces, then pour remaining butter and brush over the entire top. Bake at 350 degrees for about 30 to 40 minutes or until golden brown.
