CHINESE CHICKEN SALAD 
1 head lettuce, shredded
3 chicken breasts, boiled and shredded
4 stalks green onions, chopped
1/4 c. sesame seeds
1 pkg. wonton skins
Oil for frying

DRESSING:

1 c. light salad oil
1/3 c. seasoned rice vinegar
3 tbsp. sugar

Toss chicken, lettuce, onions and sesame seeds together in large salad bowl. Set aside in refrigerator. Cut wonton skins in thin strips and deep fry until golden brown. Do not toss into salad until ready to serve.

Mix salad oil, vinegar and sugar in a lidded container and shake gently. Toss dressing and wonton skins into salad before serving.
