PUMPKIN ROLL | |
CAKE: 1 c. sugar 3/4 c. flour 2/3 c. pumpkin 3 eggs 1 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt FILLING: 1 (8 oz.) cream cheese 1 c. powdered sugar 2 tbsp. butter 2 tsp. vanilla Cream filling ingredients all together. Mix cake ingredients together and pour in a greased 12 x 16 inch cookie sheet. Bake at 350 degrees for 15 minutes. Sprinkle a kitchen towel with powdered sugar - when cake is baked flip onto kitchen towel. Roll cake up into towel jelly roll fashion. Cool 1 1/2-2 hours. Refrigerate, unroll cake and spread with filling and reroll. (Augustaville) |
