ANCHOVY WITH TOMATOES, ANTIPASTO 
4 med. tomatoes
1 can anchovy fillets
1 tbsp. capers
1 lemon
Pepper

Slice tomatoes and arrange on a platter. Place anchovy fillets on top of tomatoes. Sprinkle capers over anchovies. Combine the oil from the anchovies with the juice of one lemon and pepper to taste. Pour over the tomatoes and anchovies. Yields 4 servings.
