SWEET POTATO CUPCAKES 
3 c. self-rising flour
2 c. sugar or substitute
1 tsp. cinnamon
1 tsp. vanilla
3 eggs
1 c. chopped pecans
1 1/2 c. cooking oil
3 c. sweet potatoes
1 tsp. nutmeg
1 sm. can crushed pineapple with juice

Mix oil and sugar, add eggs and mix well. Add dry ingredients, nuts, pineapple, vanilla and grated potatoes. Mix well. Pour in lightly greased cupcake pans and bake for 30 minutes in 350 degree oven.
