2 tbsp. butter 2 tbsp. olive oil 3 lb. chicken or 8 breasts 1/2 lb. sm. whole onions 1/2 lb. mushrooms 1/2 c. sliced scallions 1 mashed clove garlic 1 1/2 - 2 c. chambertin Salt and pepper Bay leaf 1/2 tsp. thyme Melt butter, add olive oil. Dry chicken and season and brown. Remove to buttered casserole. Place onions, scallions, mushrooms in skillet and simmer 15 minutes, and then add to casserole. Add 2 tablespoons butter and 2 tablespoons flour to skillet and stir over medium heat. Slowly add wine and cook, stirring until thickened. Pour into casserole with bay leaf and garlic and thyme stirred in last minute. Bake 1 hour and 45 minutes at 400 degrees, tightly covered. |
