SNAPPER, RED FLORIDIAN 
2 lb. red snapper fillets
3 tbsp. melted far or oil
2 tbsp. orange juice
2 tsp. grated orange rind
1 tsp. salt
Dash of grated nutmeg
Dash of black pepper

Cut in snapper fillets into serving size portions. Place a single layer, skin side down, in a well greased baking dish, 12 x 8 x 2 inches. Combine remaining ingredients and pour over fish. Bake at 350 degrees for 20-30 minutes. Makes 6 servings.
