RITA'S PECAN PIE 
1/2 c. sugar
2 tbsp. butter
2 eggs, lightly beaten
2 tbsp. flour
1/4 tsp. salt
1 tsp. almond extract
1 tsp. vanilla
1 c. light corn syrup (maple syrup may be substituted)
1 1/4 c. chopped pecan halves (as firm as possible)
1 unbaked 8-inch pie shell

Preheat oven to 350 degrees. Cream first 8 ingredients. Fold in pecans. Pour into unbaked pie shell. Bake 30-45 minutes. Serve with whipped cream.
