SWEET POTATO PUDDING 
1 c. evaporated milk
2 c. raw sweet potatoes
2 eggs, beaten until light
1 c. brown sugar
Dash of nutmeg
1/4 c. butter
1/2 tsp. grated lemon rind
2 tsp. lemon juice
1/2 tsp. cinnamon

Pare and grate sweet potatoes. Put in bowl. Add eggs and beat well. Gradually beat in sugar. Add milk, butter, lemon rind and juice. Add cinnamon and nutmeg. Blend well. In a buttered baking dish, bake at 350 degrees for 30 minutes. Stir and bake 15 minutes more.
