CRABMEAT AU GRATIN 
1/2 stick butter
3 tbsp. flour
1 1/2 c. Swiss or Cheddar cheese
1/4 lb. fresh mushrooms, sliced
1 c. milk
1/3 c. sherry
1 lb. crabmeat (or imitation)
Salt and pepper to taste

Melt butter. Add flour; stir. Slowly add milk, stirring constantly. Stir in cheese until melted. Add sherry, crabmeat and mushrooms. Place in casserole. Cover with additional cheese. Bake 350 degrees for 20-30 minutes until bubbly. Serves 4-6.
