CORNED BEEF SALAD 
3 (3 oz.) pkg. lemon gelatin
3 c. boiling water
1 (12 oz.) can corned beef
3 c. celery, finely chopped
1 green pepper, diced
2 tbsp. green onion, diced
2 c. (1 pt.) Miracle Whip
6 hard cooked eggs, chopped
1 sm. jar pimento, chopped

Dissolve gelatin in water; let cool. Mix shredded corned beef with remaining ingredients. When gelatin is partially set, stir in corned beef mixture. Pour into 9 x 13 inch pan or dish and chill (overnight, if desired). Serves 12-14. Good served with a dollop of sour cream - horseradish sauce.
