SOPAPILLAS | |
4 c. flour 1 tsp. salt 1 tsp. baking powder 1 tbsp. sugar 1 tbsp. shortening 1 pkg. active dry yeast 1/4 c. warm water 1 1/4 c. milk, scalded and cooled Shortening for frying Combine dry ingredients; cut in shortening. Dissolve yeast in warm water; add to dry ingredients along with milk. Mix well. Turn dough until floured surface; knead until smooth and elastic. Cover and set aside 10 to 15 minutes. Roll dough to 1/8 inch thickness; cut into triangles. Fry a few at a time in very hot (420 degree) shortening. If the fat is hot enough, the sopaipilla will puff up and become hollow. When golden brown remove from fat and drain on paper towels. Dust with cinnamon-sugar or serve plain and pass the honey. Yields: approximately 3 dozen. |
