RED VELVET CAKE 
2 1/2 c. flour
2 eggs
1 1/2 c. Wesson oil
1 1/2 c. sugar
1 tsp. vanilla
1 tsp. cocoa
1 tsp. baking soda
1 tsp. vinegar
1 tsp. salt
1 c. buttermilk
1 (2 oz.) buttermilk red food coloring

Mix all at one time. Cook in 3 layers at 350 degrees for 30 minutes.

FILLING:

1 box powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick butter
1 tsp. vanilla
1 c. nuts

Let cream cheese and butter stand at room temperature while cake is cooking. Then cream together. Add powdered sugar and cream well. Add vanilla and nuts. Mix well and spread between layers and on top when cake is cool.
