NEW ENGLAND FISH CHOWDER 
2 lbs. haddock
2 oz. diced salt pork
2 sliced onions
4 lg. diced potatoes
1 c. chopped celery
1 crumbled bay leaf
1 qt. milk
2 tbsp. butter
1 tsp. salt
Freshly ground black pepper

Simmer the haddock in 2 cups water for 15 minutes. Drain and reserve broth. Remove bones from fish. Saute diced pork until crisp; remove and set aside. Saute onions in pork fat until golden brown. Add the fish, potatoes, celery, bay leaf, salt and pepper.

Pour in the fish broth plus enough boiling water to make 3 cups liquid. Simmer for 30 minutes. Add milk and butter and simmer for 5 minutes. Serve the chowder sprinkled with the diced pork. Serves 6.
