PORK CHOPS WITH SPANISH RICE 
6 pork chops
2 tbsp. shortening
3/4 c. uncooked rice
1 c. boiling water
2 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped green pepper
1 tbsp. minced onion
3 c. tomato juice

Brown pork chops in shortening. Add remaining ingredients and cover. Cook in slow oven for 1 1/2 hours. Serves 6.
