COFFEE CAKE 
1 c. butter
2 eggs
1 tsp. vanilla extract
1 c. buttermilk
3 c. flour
1/2 tsp. salt
1 tsp. baking soda
white or chocolate icing

Wash hands. Preheat oven to 350°F.

Mix together butter, eggs, sugar and vanilla until creamy. Sift together flour, salt and baking soda. Combine mixture of butter, eggs, sugar and vanilla with sifted mixture of flour, salt and baking soda, alternating with 1 cup buttermilk. Place ingredients on 1-inch cookie sheet (greased and floured pans).

Bake approximately 30 minutes. Let cake cool. Use favorite icing and cut into squares.
