MY FAVORITE MINT BROWNIES 
BROWNIES:

1 pkg. fudge brownie mix
1/2 c. water
1/2 c. oil
1 egg
1/2 tsp. mint extract

Combine brownie ingredients and beat with spoon, 50 strokes. Spread in oblong pan with greased bottom. Bake at 350 degrees F. for 35 minutes.

FILLING:

1/2 c. butter
3 oz. pkg. cream cheese, softened
2 1/2 c. powdered sugar
3 tbsp. creme de menthe syrup
2 to 3 drops green food coloring

Combine butter and cream cheese. beat until creamy and fluffy. Add powdered sugar, creme de menthe syrup and food coloring; beat until smooth. Spread evenly over cooled brownies. Refrigerate for about 15 minutes before frosting.

FROSTING:

6 oz. chocolate chips
1/3 c. butter

Melt chocolate chips and butter in small saucepan (I use the microwave) until smooth. Cool for 10 minutes. Pour frosting over mint filling and carefully spread. Refrigerate 1 hour before cutting. Keep in refrigerator.

Since microwave ovens vary in power, you may need to adjust your cooking time.
