SHRIMP ETOUFFE 
2 lbs. shrimp, peeled
3/4 c. butter
1 c. onion, minced
1 c. green onion, minced
4 tsp. paprika
6 tbsp. flour
4 c. water
Salt, pepper, cayenne pepper to taste

Melt butter in heavy saucepan. Add onions and saute until wilted and turning clear. Add flour and stir until mixed. Do not brown. Add seasonings, water and simmer for 15 minutes. Add shrimp and simmer another 20 minutes. Serve over rice. Serves 6.
