CRANBERRY - ORANGE BARS 
1 c. finely chopped cranberries (2 c. whole fresh or frozen berries)
2 oranges, ground with skins & pulp
1/2 c. dark or golden raisins
1/4 c. dark or light brown sugar
1/3 c. butter
2 eggs
1 tsp. vanilla extract
1 c. whole wheat flour
1 c. unbleached all-purpose flour
2 tsp. baking powder

Combine the cranberries, oranges, raisins and brown sugar in a mixing bowl. Set aside.

Cream the butter until light and fluffy. Add 1 egg at a time and beat well. Blend in the vanilla. Gradually add the flours and baking powder to the creamed mixture. Stir in the cranberry mixture and pour the batter into a greased 13 x 9 inch baking pan. Bake in a 350 degree oven for 30-40 minutes, or until browned on top. Cool in the pan on a wire rack. Cut into bars. Makes 24.

2 tablespoons fructose can be used instead of brown sugar.
