SIMPLY ELEGANT CHICKEN
TORTELLINI SOUP
 
1 (12 1/2 oz.) can chunk chicken or turkey, undrained
1 (49 1/2 oz.) can Swanson chicken broth
10 oz. dry, fresh or frozen cheese tortillini
1 tbsp. olive oil or butter
1 onion, chopped
2-3 stalks celery, chopped
3-4 carrots, chopped
2 tbsp. fresh parsley, chopped
1/4 tsp. pepper
1/4-1/2 tsp. garlic salt
1/4-1/2 tsp. poultry seasoning

Saute celery, onions and carrots in oil until onions are tender, about 5 minutes. Add chicken, broth and all seasonings. Cook until vegetables are tender, about 10 minutes. Stir in tortellini and simmer gently until tortellini are tender. Serve immediately or cool as tortellini will fall apart if overcooked.
