WARM SPINACH AND CHICKEN SALAD 
3 c. torn spinach
3 slices red onion, halved
1/2 c. sliced fresh mushrooms
11 oz. can mandarin oranges
1/4 c. chopped walnuts
2 1/2 chicken breasts, cut into thin slices
1/2 c. bottled champagne dressing

In salad bowl combine spinach, onion, orange and mushrooms. In medium skillet, heat oil. Add walnuts and chicken. Sauté until chicken is done. Add dressing and heat thoroughly. Spoon over salad in bowl; toss. Serve immediately.

Serves 4.
