CHICKEN CACCIATORE 
1 chicken (approx. 4 lbs.), cut up
Salt pork, minced & chopped
1 clove minced garlic
3 onions, chopped
2 carrots, chopped
Wesson oil
2 stalks celery, chopped
2 c. water
1 c. sherry
1 med. can tomatoes
Parsley, oregano, salt & pepper to taste

Brown minced garlic and salt pork, slowly in Wesson oil. Brown cut up chicken and onions. Add vegetables, tomatoes and sherry to chicken. Season with parsley, oregano, salt and pepper. Cook for 10 minutes. Add 2 cups of water, cover and simmer for about 1 hour, stirring occasionally.
