TOFFEE WITH CHOCOLATE COATING 
1 c. butter
1 c. sugar
1 tsp. vanilla
1 c. salted mixed nuts, chopped

Melt butter and sugar in bottom of a heavy pan or pressure cooker. Turn heat to high; boil hard and fast until mixture becomes light tan, and frothy boil subsides. Add vanilla and nuts. Pour into a well-buttered pan. Cool. Break into pieces. Can be covered with chocolate coating. Would be like a Heath bar.

CHOCOLATE COATING (optional) :

Place water into bottom of a double boiler. Heat almost to boiling, remove from heat; add chocolate coating to top of double boiler, let stand to melt, about 10 minutes. Stir occasionally. Spread on top of Toffee. Do not melt chocolate over boiling water.
