SOFT-SHELL CRAWFISH MARINATED
AND FRIED IN LIGHT BATTER
 
BATTER:

2 c. flour
1 tsp. salt
1 tsp. sugar
2 eggs
2 c. ice water
Hot seasoning to taste

Marinate prepared soft-shell crawfish in buttermilk for at least 3 hours. After marinating, dip crawfish in batter and deep fry until golden brown.
