LEMON SUGAR COOKIES 
1 c. butter
1 1/2 c. sugar
2 eggs
1 tbsp. lemon extract
3 c. flour
2 tsp. baking powder
1/2 tsp. salt

In a large bowl cream butter and sugar together until light. Add eggs and extract. In a separate bowl, sift together flour, baking powder, and salt. Stir dry ingredients into creamed mixture and mix thoroughly. Wrap dough in 3 separate batches. Chill dough overnight. Preheat oven to 350 degrees. Roll dough out very thinly on cold plastic chopping board. Dip cookie cutter into flour and cut out shapes. Bake on ungreased cookie sheet for 6-9 minutes. Makes 10 dozen small cookies.
