SESAME CHICKEN
3 to 4 chicken breasts
3 tbsp. vegetable oil
1/4 c. sesame seeds
1/2 c. soy sauce
1/4 c. brown sugar, firmly packed
1 tsp. ground ginger
1/2 tsp. pepper
4 cloves garlic, minced
4 green onions, thinly sliced

Skin and bone chicken breasts; cut into 1 inch chunks. In a large skillet, cook sesame seeds in oil over medium-low heat, stirring occasionally until seeds are golden, about 2 minutes; cool. Stir in soy sauce, sugar, ginger, pepper, garlic, and half the green onions. Mix in chicken. Cover and chill 1 to 4 hours. Arrange meat in a single layer in a baking pan; pour marinade over meat. Broil 6 inches from heat until golden, about 10 minutes. Turn chicken and broil 5 minutes more or until meat is no longer pink inside. Serve with rice and garnish with remaining sliced onions. Serves 4 to 6.
