TURKEY - TORTILLA CASSEROLE | |
4-5 c. diced turkey or chicken 1 can cream of mushroom soup 1 (4 oz.) can diced green chilies 1 (7 oz.) can green chili salsa 1 (2 1/4 oz.) can sliced olives, chopped 1/3 c. thinly sliced green onions 3/4 tsp. ground cumin 8 corn tortillas, cut in 1/2 inch strips 2 c. each shredded Jack and cheddar cheese Combine turkey soup, chilies, salsa, olives, green onion and cumin. Arrange half of the tortilla strips in the bottom of a greased hallow 3 quart baking dish. Cover evenly with half of the turkey mixture and all the Jack cheese. Top with remaining tortilla strips, then remaining meat. Sprinkle cheddar evenly over all. This much can be done ahead. Cover and chill up to 24 hours. Bake uncovered at 350 degrees for 30 minutes or until cheese is bubbly and mixture is hot. Let stand about 5 minutes. Cut into squares and serve. Serves 8 people. |
