FILLED COOKIES 
1 c. sugar (can use 1/2 white, 1/2 brown)
2/3 c. shortening
2 eggs
1/3 c. milk
1 tsp. vanilla
3 c. flour
3 tsp. baking powder
1/2 tsp. salt

Mix first 5 ingredients until creamy, and then remaining ingredients; mix well. Roll dough on floured board. Cut out and place on greased cookie sheet. Place 1 teaspoon of fruit filling in center of each cookie. Top with another cookie on top. Seal edges with fork and fingers.

Cut bottom cookie dough with a glass or round doughnut cutter. Can cut top cookie with same cutter but put hole in top with thimble so as to see filling. Bake at 375 degrees for 10-15 minutes.

FILLINGS:

RAISIN:

1 c. raisins
1 c. water

Let cook until soft. Thicken with cornstarch. Add:

APRICOT:

Cook until soft and according to package. Mash and sweeten to taste.

PINEAPPLE:

Thickened and sweetened.
