EASY & ELEGANT QUICHE 
1 1/2 c. Swiss cheese (6 oz., grated)
6 to 8 slices bacon, cooked, crumbled
3 eggs
1 1/2 c. milk & cream (in proportions you wish)
9 inch pastry shell, unbaked, chilled
1/2 tsp. salt
1/4 tsp. BLAIR black pepper
1/4 tsp. dry mustard
1/4 tsp. BLAIR nutmeg
1/2 tsp. BLAIR butter flavoring

Sprinkle cheese and crumbled bacon evenly into chilled pie shell. Break eggs into blender, mix briefly and add remaining ingredients. Blend thoroughly and pour over bacon and cheese mixture in pie shell. Bake at 375 degrees for 45 minutes or until knife in center comes out clean. Allow to cook about 10 minutes before serving. May also be served cold. Delicious with a tossed salad and white wine for a luncheon. Other cubed, cooked meats or seafood may be substituted for the bacon.
