CRANBERRY QUICK COOKIES 
1 pkg. Pillsbury cranberry quick bread mix
3/4 c. quick cooking rolled oats
1/2 c. coconut
1/2 c. sweetened dried cranberries
1/2 tsp. grated orange peel
1/2 c. oil
1 tbsp. water
2 eggs

Combine quick bread mix, oats, coconut, cranberries and orange peel; mix well. Add oats, water and eggs; mix well. Drop by heaping teaspoons 2-inches apart onto ungreased cookie sheet.

Bake at 350°F for 10 to 13 minutes until bottoms are golden.

Makes 3 dozen.

Passover Variation: 1/2 cup potato starch, 1/2 cup matzo meal and 3 eggs.
