POTATO PANCAKES 
2 c. grated raw potatoes (drain before measuring)
2 beaten eggs
1 heaping tbsp. flour
1 sm. onion, grated
1 tsp. salt
1/4 tsp. baking powder

Mix all ingredients. Drop mixture by tablespoonfuls onto a hot well-greased frying pan. Fry on both sides until golden brown. Serve hot. Serves 4 to 6 people.

Sour cream or applesauce make good accompaniments to potato pancakes.
