VEGETABLE FRITTERS 
1 c. diced raw potatoes
3/4 c. grated carrot
1/2 c. onion
1/4 c. green pepper
1 clove garlic or 1/8 tsp. garlic powder

BATTER:

3/4 c. flour
1/4 c. milk
2 eggs
1 1/2 tsp. salt

Mix raw vegetable with batter. Fry in oil (about tablespoon size scoops).
