TOFU STUFFED TOMATO 
1 1/2 lb. tofu, crumbled or mashed
1/2 c. tofu salad dressing
1/2 c. parsley, chopped
1/4 c. dill pickle relish (no sugar)
1/2 med. onion, chopped fine
2 stalks celery, chopped fine
1 1/2 tsp. garlic powder
1 1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. black pepper
4 med. tomatoes, cored

Mix together all ingredients except tomatoes. Measure 4 ounces of tofu mixture and spoon into cored tomatoes. Single serving = 4 ounces protein, 1 cup salad.
