PECAN CRUNCH COOKIES 
1 c. butter
1/2 c. sugar
1 tsp. vanilla
1/2 c. crushed potato chips
1/2 c. chopped pecans
2 c. flour

Cream butter, sugar and vanilla. Add potato chips and pecans. Stir in flour. Form into small balls, using 1 tablespoon of dough. (This step is easier if the dough is chilled.) Place on ungreased cookie sheet. Press balls flat with bottom of a glass dipped in sugar. Bake at 350 degrees for 16 to 18 minutes or until cookies are lightly browned. If desired, sprinkle with red or green sugar crystals. Makes 3 1/2 dozen cookies.
