PECAN CRUNCH BARS 
1 c. butter
1 c. sugar
2 c. sifted flour
2 tsp. cinnamon
1 egg yolk
1 egg white
1/2 c. sugar
2 tsp. cinnamon
1 c. chopped pecans

In bowl, cream butter, blend in the cup of sugar, flour, 2 teaspoons cinnamon and egg yolk. Thoroughly blend. Spread mixture evenly into ungreased jelly roll pan (10 x 15 x 1/2 inch) using a rubber scraper.

In smaller bowl, beat egg white until foamy and brush over dough in pan with pastry brush. Stir together remaining sugar and cinnamon and sprinkle over egg white. Top with chopped pecans.

Bake in 350 degree oven for 30 minutes. Remove from oven and mark into squares or bars with small spatula while hot. Cool thoroughly in pan. Makes approximately 5 dozen.
