SUNSHINE CAKE | |
7 eggs - separate whites from yolks 1 c. sugar 1 c. cake flour 1/8 tsp. salt 1 tsp. cream of tartar 1 tsp. vanilla or lemon 1/4 c. water plus 1 tbsp. water Beat yolks and add sugar gradually until very creamy. In second bowl, add cream of tartar to whites of eggs, beat until very light. Add water to yolks being beaten with sugar and beat until very light. First step now is to fold in the flour and flavoring and salt after mixing. Next fold the whites of eggs into the yolks and flour mixture. Pour into a 10 inch tube pan that has NEVER BEEN GREASED. The cake must rise sticking to the sides of the pan other wise it will fall. Since it will be sticking to the pan let it cool upside down until cold. |
