TACO SALAD 
1 pkg. Mexican rice mix (yellow rice)
1 lb. ground beef
1 onion, chopped
1 can tomato soup
1 can Cheddar cheese soup
1 pkg. taco seasoning
1/2 c. water
Taco sauce
Lettuce
Corn chips
Tomatoes
Chili peppers
Black olives
Sour cream

1. Cook rice according to package directions.

2. Brown beef and onion; drain.

3. Mix rice, beef, soups and taco seasoning. Heat through.

4. Serve with taco sauce and any available toppings.

I have substituted cooked white rice or Spanish rice. You can also serve a crowd by adding more rice.
