NACHO CASSEROLE 
1 tbsp. oil
1 tsp. minced garlic
1 can tomato sauce (15 oz.)
1 can kidney beans (20 oz.)
1 bag taco chips (8 oz.)
1/2 c. chopped scallions
1 c. chopped onion
1 1/2 lb. ground beef
1 pkg. taco seasoning mix
2 c. Cheddar cheese
Sour cream
1/2 c. taco sauce

In large skillet heat oil and saute onions and garlic; add ground beef and brown. Drain off fat. Stir in tomato sauce and taco seasoning and remove from heat. Set aside. Drain kidney beans and toss with 1 cup cheese.

In 2 quart casserole dish grease dish and line bottom with 1/3 taco chips than 1/3 bean mixture, then 1/3 taco chips, spoon meat mixture over this layer of chips and top with remaining chips. Drizzle taco sauce over top and sprinkle with remaining cheese and scallions. Bake at 350 degrees for 25 minutes. Serve with sour cream.
