FRUIT PIE
1 1/2 c. Grape Nuts or Nuggets
1/3 c. apple juice concentrate
1 tsp. cinnamon
1 (8 oz.) can pineapple chunks (juice pack)
1 3/4 c. unsweetened pineapple juice
1 env. unflavored gelatin
2 sm. bananas
2 c. strawberries, sliced
2 kiwi fruit, peeled and sliced

Mix Grape Nuts, apple juice concentrate, and cinnamon together. Press into 9 inch pie pan. Bake at 350 degrees for 10 minutes.

In a small saucepan, stir together pineapple liquid and gelatin. Let stand 5 minutes. Cook and stir over low heat until gelatin dissolves. Cover and chill to the consistency of unbeaten egg whites.

Slice bananas. Arrange over cooled crust, then top with 2/3 cup of glaze. Arrange strawberry slices over glaze. Stir together pineapple pieces and remaining glaze, then spoon over strawberries. Chill for 2 to 4 hours. Just before serving, then spoon over strawberries.

The kiwi fruit contains enzymes that breaks down the gelatin, so be sure to put it on at the last minute.
