LEMON SQUARES 
1 c. all-purpose flour
1/2 c. (1 stick) butter, softened
1/4 c. confectioners sugar
2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tbsp. lemon juice

Heat oven to 350°F. Mix thoroughly the flour, butter and confectioners sugar. Press in ungreased square pan, 8x8x2-inches, building up a 1/2-inch edge.

Bake 20 minutes. Beat remaining ingredients about 3 minutes or until light and fluffy. Pour over hot crust.

Bake about 25 minutes longer or just until no imprint remains when touched lightly in center. Cool; cut in squares.

Makes 25 cookies.
