CITRUS TRIO MARMALADE 
1 med. orange
1 med. lemon
1 sm. grapefruit
1 1/2 c. water
1/8 tsp. baking soda
4 1/2 c. sugar
1/2 (6 oz.) bottle liquid fruit pectin

Using point of knife, score peel of orange, lemon, and grapefruit in 4 lengthwise sections; remove peel. If peel is thick, remove about half of white portion. Slice peel in thin strips; add water and soda. Bring to boiling; simmer, covered, 20 minutes, stirring occasionally. Chop fruit of orange, lemon, and grapefruit; discard seeds. Add fruit to peel; simmer, covered, 10 minutes more. Measure 2 1/4 cups fruit mixture into Dutch oven. Add sugar; mix well. Bring to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat; stir in pectin. Stir and skim off foam for 5 minutes. Ladle into clean hot jelly jars; seal with 1/8 inch hot paraffin. Makes 6 half pints.
