CREAM OF BROCCOLI SOUP 
1 bunch fresh broccoli or 1 pkg. (8 oz.) frozen (thawed & drained) chopped fine
1 sm. onion, chopped fine
1 sm. onion, chopped fine
4 oz. butter
3/4 c. flour
1 qt. chicken broth
1 c. milk or half & half

Saute broccoli and onion in butter for 15 minutes. Add flour mix to roux. Cook on low 5 minutes. Boil chicken stock and add to roux. Mix and simmer for 15 minutes. Mash to smooth. Add milk and season if necessary. Simmer for 10-15 minutes. Serves 4-6.
