POACHED SALMON 
1 c. water
1 c. white wine vinegar
1 c. orange juice
1 c. lime juice
1 tsp. salt
1 tsp. peppercorns
2 whole allspice or 1/4 tsp. ground allspice
1 tsp. dried dill weed
4 sm. salmon steaks

Combine all ingredients except for salmon in large skillet. Add salmon steaks, cover and simmer 10 minutes or until salmon flakes easily. Remove from heat and chill. Remove from broth before serving. Serves: 4.
