OLD FASHIONED PEANUT BRITTLE | |
1 c. peanuts 1 c. sugar 1/2 c. white corn syrup 1 tsp. baking soda 1 tsp. vanilla 1 tsp. butter 1/2 tsp. salt (you may wish to change this) In a 1 1/2 quart casserole dish, stir together the peanuts, sugar, corn syrup and salt. You may wish to omit the salt or use salted peanuts, this will be a matter of your choice. Cook this in the microwave about eight minutes on High. Best to stir a couple of times during this cooking, at least once after four minutes. Add butter and vanilla. Stir them in and cook another minute on High. Add in the baking soda and quickly stir until light and foamy. Then immediately pour into a lightly buttered pan or cookie sheet. Spread out thin to cool. When cool, break into pieces and taste it. If there is any left, store in an airtight container. |
