3/4 lb. smoked ham, diced
1 lb. chicken breasts (boneless & skinless), cut into bite-size pieces
2 bay leaves
2 tbsp. Cajun spice
1 c. onion, chopped
1 c. celery, chopped
1 c. green pepper, chopped
1 tbsp. garlic, minced
1 c. tomato sauce
1 c. tomatoes, chopped
2 1/2 c. chicken broth or water
1 1/2 c. converted rice (uncooked)
