SHRIMP CHOWDER 
1 lg. onion, peeled and sliced
1/4 c. butter
1 c. boiling water
6 med. potatoes, cubed
1 tbsp. salt
1/2 tsp. pepper
1 1/2 qt. milk
2 c. grated cheddar cheese
2 lbs. raw shrimp, shelled and deveined
Parsley, optional

About 1 hour before serving, saute onion in butter in Dutch oven or large pan. Add boiling water, potatoes, and spices. Cook until potatoes are done. Add milk. Just before serving add shrimp and cheese.

Can also be done in crock pot sauteing onions and adding all ingredients except cheese and shrimp.
