SWEET POTATO CUSTARD 
2 eggs, beaten
1 3/4 c. milk
1 tsp. grated orange rind
1/4 tsp. nutmeg
1/4 c. sugar
2 1/2 c. finely shredded raw sweet potatoes
1 tbsp. melted butter

Beat eggs slightly. Add milk, orange rind, nutmeg and sugar. Mix thoroughly. Add sweet potato and butter.

Pour into greased custard cups and set in a pan of hot water. Bake at 350 degrees for about 30 minutes or until set (or pour into a greased casserole dish and bake until set).
