SWEET POTATO BISCUITS 
2 c. self-rising flour
1/4 c. sugar
3 tbsp. shortening
2 tbsp. butter, softened
1 c. cooked, mashed sweet potatoes (1 lg. potato)
1/3 c. milk

Combine flour and sugar in a medium bowl; cut in shortening and butter with a pastry blender until mixture resembles coarse meal. Add mashed sweet potatoes and milk, stirring just until dry ingredients are moistened. Turn dough out onto a lightly floured surface; knead 4 or 5 times. Roll dough to 1/2" thickness; cut with a 2" biscuit cutter. Place on lightly greased baking sheets. Bake at 400 degrees for 15 minutes or until golden brown. Yield: 1 1/2 dozen.
