CHEESE AND SPINACH CASSEROLE 
1 lb. creamed cottage cheese
3 unbeaten eggs
1/4 lb. American cheese, cut in coarse pieces
1/4 c. butter
1/2 to 1 pkg. frozen chopped spinach, partially thawed
3 tbsp. flour
Salt to taste

Put cottage cheese into mixing bowl. Add eggs. Add cheese and butter, cut into coarse pieces. Snip partially thawed spinach with kitchen shears into first mixture. Add flour; salt, stir until thoroughly blended. Pour into buttered 1 1/2 quart casserole. Bake at 350 degrees about 1 hour, until set and crust is golden.
